Why Does High Altitude Change Baking?
As you climb, air pressure falls. Two things follow, and both wreck ordinary recipes:
- Gases expand more. With less pressure pushing back, the carbon dioxide from your leavening and the steam in your batter expand faster and further. Batter over-rises before its structure can set, then collapses — the classic sunken cake.

What Is the Water Boiling Point at My Elevation?
Water boils when its vapor pressure matches the surrounding air pressure.
