About Meat Curing Salt Calculator
The Meat Curing Salt Calculator turns a target ingoing nitrite level in parts per million into the two numbers you actually weigh out: how much curing salt and how much plain salt. It handles a dry cure, an immersion brine and a pumped brine separately, because the weight the ppm is measured against is different in each one, and it works backwards too if you have already mixed something and want to know what you made.
Two things here that a plain "2.5 grams per kilo" rule cannot do. First, curing salt is mostly sodium chloride — Cure #1 is 93.75% salt — so the cure and your salt target are not independent, and the salt the cure brings is subtracted from the salt you add. Second, the batch is checked against the legal ingoing limit for the product class you picked, which ranges from 120 ppm for pumped bacon to 625 ppm for a dry-cured whole muscle.
What Curing Salt Actually Is
Cure #1 — also sold as Prague Powder #1, Insta Cure #1, pink curing salt or DQ Curing Salt — is 6.25% sodium nitrite and 93.75% ordinary salt. The nitrite is the working ingredient; the salt is a carrier that makes a dangerous chemical dilute enough to weigh on a kitchen scale. Cure #2 is the same thing plus 4% sodium nitrate, a slow-release reserve that bacteria convert into nitrite over weeks of drying.
Sodium nitrite does four jobs at once, and no single substitute does all four: it blocks Clostridium botulinum in the low-oxygen inside of a sausage or a rolled joint, it slows the rancidity that makes old fat taste like cardboard, it produces the cured pink colour by binding to myoglobin, and it creates the tangy flavour we recognise as ham rather than roast pork.
The Formula
Parts per million is simply milligrams per kilogram, which makes the arithmetic much friendlier than it looks.
Which Weight Do You Multiply?
This is where most home-curing mistakes happen, and it is worth more than the arithmetic.
- Dry cure or sausage mix — the meat alone. Everything you mix in ends up inside the product, so the meat weight is the whole denominator. Include the fat you are adding to a sausage; it is part of the batch.
- Immersion brine — the meat plus the brine. The nitrite spreads through the whole bucket, not just the meat, so a 2 kg loin in 4 L of brine is a 6 kg system. Dosing only for the meat leaves the meat at roughly a third of what you intended.
- Pumped or injected — the green meat weight. The regulation is written against the weight of the meat before injection, so a 10% pump needs a brine ten times stronger than the level you want in the finished meat.

Curing Salts Are Not Interchangeable
The nitrite strength varies by more than a factor of twelve between products sold for the same job. This table is the reason a European recipe and an American recipe read so differently.

The Salt Trap Nobody Warns You About
Because Cure #1 is 93.75% salt, 2.5 g of it per kilogram brings 2.34 g of salt with it — about 0.23% of the meat. That is small enough to ignore in a 2% bacon cure, and it is exactly why nobody mentions it. Then people try the same reasoning with European nitrite curing salt and it falls apart completely.
NPS at 0.5% nitrite needs 31 g per kilogram to reach 156 ppm — a 3.1% salt product, far saltier than anyone wants. Turned around, a normal 2% salt dose of NPS delivers only about 100 ppm of nitrite. With a low-nitrite curing salt the two targets are locked together and you simply cannot set them independently; you choose the salt level and accept the nitrite level that comes with it. The calculator states both numbers so the trade-off is visible instead of accidental.
Equilibrium Curing and How Long It Takes
The old way of curing was to bury meat in salt and rely on time and rinsing to land somewhere edible. Equilibrium curing instead weighs out exactly the salt and cure the finished product should contain, seals it all in a bag with the meat, and waits for it to distribute evenly. Nothing is rinsed away, nothing is guessed, and leaving it an extra week does no harm — the meat cannot get saltier than what you put in the bag.
The waiting time is governed by how far the cure has to travel from the surface to the centre. The working rule for whole muscle is seven days per inch (25 mm) of thickness, plus two days of grace, measured on the thickest part rather than the length. Ground and mixed products are different: the cure is already everywhere, so an overnight rest is usually enough before stuffing.

Practical Curing Tips
A 1 kg batch needs 2.5 g of cure. A scale that rounds to the nearest gram can be 20% out on that, which is the one ingredient where 20% matters.
Keep curing salt in its original labelled tub. Pink dye exists precisely because a jar of unlabelled white powder in a kitchen is a real hazard.
Blend the small cure dose into the full salt weight before it touches the meat, so no part of the batch gets a concentrated pocket.
Curing happens in the fridge at 2–4 °C. A cure is not a substitute for refrigeration, and warm curing is how the pathogens win the race.
Weight, ppm, salt percentage, date in. Half of getting good at curing is being able to repeat the batch that worked.
Before smoking or drying, cook a thin slice to judge the salt. Too salty is fixable by soaking now, and impossible to fix later.

How much Cure #1 do I need per kilogram of meat?
For the standard 156 ppm ingoing level you need 2.5 g of Cure #1 per kilogram of meat, which is 0.25% of the meat weight. In American measures that is 1 level teaspoon per 5 lb. The figure comes from the fact that Cure #1 is 6.25% sodium nitrite, so 2.5 g carries 156 mg of nitrite, and a milligram per kilogram is one part per million.
What is the difference between Cure #1 and Cure #2?
Both are 6.25% sodium nitrite in salt. Cure #2 adds 4% sodium nitrate, which does nothing immediately but breaks down slowly into more nitrite over weeks. Cure #1 is for anything cooked or eaten within about 30 days, such as bacon, ham and fresh sausage. Cure #2 is only for products that hang and dry for a month or more without ever being cooked, such as salami, pepperoni and coppa. Using Cure #2 in a cooked product adds nitrate that never converts, and using Cure #1 in a long dry cure leaves the second half of the drying without protection.
Is 156 ppm of sodium nitrite safe?
156 ppm is the ingoing limit the USDA sets for comminuted products, and it is the level almost every tested curing recipe is built around. Ingoing means the amount you mix in; most of it is consumed during curing and cooking, so the residual nitrite in the finished product is typically under 40 ppm. The danger in home curing is not the calculated dose but a weighing error, so use a scale that reads to 0.1 g and never estimate curing salt by eye.
Can I use European nitrite curing salt instead of Cure #1?
Yes, but it is not a spoon-for-spoon swap and it changes how the recipe works. European nitrite curing salt, sold as NPS, Pokelsalz or sale nitritato, is only 0.5 or 0.6% sodium nitrite, which is a twelfth of the strength of Cure #1. It is designed to replace all of your salt rather than to be added on top of it, so the salt percentage you choose decides the nitrite level you get. At a normal 2% salt, 0.5% nitrite salt gives about 100 ppm of nitrite, and you cannot raise that without making the product saltier.
Do I count the brine weight when curing in a bucket?
Yes. In an immersion cure the nitrite is shared between the meat and the water it sits in, so the parts per million are calculated on the meat and the brine added together. What happens if I use too much or too little curing salt?
Too little is the more dangerous mistake in slow or anaerobic products, because below roughly 40 ppm the meat still turns pink and looks cured while having almost none of the protection that colour is supposed to signal. Too much tastes harsh and metallic long before it becomes a medical problem, and the legal ceilings of 156 to 625 ppm depending on product class exist to keep well inside that margin. If you find you have doubled a dose, discard the batch rather than trying to dilute it, and store curing salt labelled and away from the table salt.
