Charts publish a range like "apples, 135 °F, 7–15 hours" and leave you to guess which end you are at. That range is not uncertainty about apples — it is mostly the difference between someone cutting eighth-inch rings and someone cutting half-inch wedges. Tell the tool what you are actually cutting and the range narrows to something you can plan a day around.

The Four Temperature Bands, and Why They Are Not Interchangeable

Temperature in a dehydrator is not a speed dial. Each band exists for a different reason, and moving a food out of its band costs you either the batch or the point of the food.

Thickness Is the Variable Nobody Puts in the Chart

Drying is water diffusing out of a slab of food. The distance it has to travel is half the thickness, and diffusion time rises with the square of that distance in the idealised case. Real food shrinks as it dries, which shortens the path, and its surface stiffens, which lengthens it; measured exponents for food slabs land between about 1.4 and 1.8.

The practical consequences are worth stating plainly:

  • Going from 1/8 in to 1/4 in triples the drying time, it does not double it.
  • Going from 1/4 in down to 3/16 in saves about a third of the run, for one pass with a mandoline.
  • Uneven slices are the real enemy. If half the tray is 3 mm and half is 8 mm, the thin half is brittle before the thick half is safe, and you either scorch the one or store the other wet.
  • Whole pieces — berries, grapes, green beans, herb sprigs — have no thickness for you to set, which is exactly why their published ranges are the widest on any chart. Halving, frenching or checking the skins is the only lever you have.

Jerky: the One Place a Chart Can Get You Hurt

Almost every jerky chart says "160 °F, 4 to 8 hours" and stops. That instruction alone is not safe, for a reason that is genuinely counter-intuitive: as meat dries, the bacteria in it become more heat resistant, not less. Water carries heat into cells and helps destroy them; a drying surface with falling water activity protects the organisms sitting on it. Holding raw strips at 160 °F for six hours does not reliably deliver the lethality that 160 °F delivers in a moist roast.

The USDA and the National Center for Home Food Preservation both give the same fix, and it takes ten minutes:

  • Pre-heat method. After marinating, simmer the strips in the marinade for about 5 minutes, or steam them, until no part of a strip is still pink. Drain, pat, and dry them as normal.
  • Post-heat method. Dry the jerky to the bend-and-crack stage, then spread it on a sheet pan and hold it in a 275 °F oven for 10 minutes.

Either one works. Doing neither is the gamble, and it is the reason this tool leads with the protocol rather than with the hours. Ground-meat jerky deserves the extra caution, because grinding spreads surface bacteria through the whole batch — use a cure containing nitrite and never skip the heat step.

Case Hardening: How a Dry-Looking Batch Moulds in the Jar

Turn the temperature up and the surface of each piece loses water faster than the interior can resupply it. The surface stiffens and seals, and the water still inside has nowhere to go. The piece looks and feels done. Three weeks later, that moisture has redistributed through the piece and you have mould in a jar you were confident about.

The three causes are always the same: too hot, too thick, or air far too dry at the very start of a high-sugar fruit run. The three defences are equally simple: stay in the band, cut thinner, and condition the batch afterwards so that anything you got wrong shows up as condensation on the glass instead of as a spoiled jar.

Doneness Is a Test on Cooled Food

Everything on a warm tray is more pliable than it will be at room temperature, so a piece tested hot always feels wetter than it is — and, more dangerously, a piece that feels right when hot is under-dried when it cools. Take one piece out, wait five minutes, then test it:

Conditioning: the Week That Decides the Year

Pieces never dry evenly. Conditioning evens them out and tests the batch at the same time:

  1. Cool completely on a rack — 30 to 60 minutes, until nothing is warm to the touch.
  2. Fill jars two-thirds full and seal them. Leave the air space; that air is what carries the moisture between pieces.
  3. Shake once a day for 7 days. Moisture from the thicker pieces redistributes into the drier ones.
  4. Watch the glass. Any condensation at all means the batch is not dry — back on the trays for another two hours, then start the week again.
  5. Then store airtight, dark and cool, with an oxygen absorber for anything you want to keep past six months.

Jerky is the exception: it is refrigerated or frozen rather than conditioned, because its remaining moisture and its fat content both put a hard limit on shelf life whatever you do.

How to Use This Guide

  1. Choose the food from the grouped list. The temperature comes with it — herbs, vegetables, fruit and meat each have their own band.
  2. Enter the slice thickness you are really cutting, in millimetres or inches. Whole-piece foods hide this field because there is nothing for you to set.
  3. Pick your machine, your tray load and your room humidity. A stackable unit needs rotating; an overloaded tray adds a quarter to the run; a humid day adds a fifth.
  4. Add the batch weight if you want the dried yield and the tray count, so you know before you start whether it fits in one run.

Tips That Save Batches

🔪 One thickness per tray

Sort pieces by thickness across trays rather than mixing them. Thin trays come out early, thick trays stay in — you cannot do that if every tray has both.

🍋 Dip anything that browns

Apple, pear, banana and peach go grey without an acid dip. Five minutes in lemon water or ascorbic acid solution costs nothing and changes the colour of the whole jar.

🧅 Never dry onion beside fruit

Onion and garlic scent everything in the machine and stay in the plastic for a couple of runs afterwards. Give them their own session, ideally in a garage.

🫧 Break waxy skins first

Blueberries, grapes and cranberries are waterproof until you check them — 30 seconds in boiling water then straight into ice. Skipping it can double the run.

🌙 Start long runs in the morning

A 20-hour run started at 8 pm finishes when you are asleep and gets over-dried. Start it when you can be there for the late end of the window.

🏷️ Label the jar, not the lid

Lids get swapped. Write the food and the date on the glass, because every jar of dried food looks identical eight months later.

What temperature should I set my dehydrator to?

It depends on the food, and the spread is wider than most people expect. Herbs and delicate leaves go at 95 to 105 degrees Fahrenheit to keep the volatile oils that are the point of the herb. Vegetables run at 125, fruit at 135, fish at 145, and meat for jerky at 160, or 165 for poultry. Those numbers are not a matter of taste: below the right band the food spoils faster than it dries, and above it the surface seals shut while the middle is still wet. If your machine has one fixed temperature it is usually near 155 degrees Fahrenheit, which is right for jerky and too hot for everything else.

How much does slice thickness change the drying time?

More than any other variable, and not in proportion. Drying is water diffusing out of a slab, so the time rises roughly with the thickness raised to the power of 1.6. Taking an apple slice from an eighth of an inch to a quarter inch does not double the time, it roughly triples it. That is also why published ranges are so wide: a chart that says apples take 7 to 15 hours is mostly describing the difference between one person's knife work and another's. Cut every piece to the same thickness and the range collapses into something you can plan a day around.

Is it safe to make jerky in a dehydrator?

Only with a separate lethality step, because drying on its own is not one. As meat dries its water activity falls, and bacteria in dry food become more heat resistant rather than less, so holding raw strips at 160 degrees Fahrenheit for hours does not reliably destroy salmonella or E. coli. The USDA answer is to bring the strips to 160 degrees Fahrenheit internally, or 165 for poultry, either before drying by steaming them or simmering them in the marinade until no longer pink, or after drying by putting them in a 275 degree Fahrenheit oven for 10 minutes. Do one or the other every single time.

What is case hardening and how do I avoid it?

Case hardening is a dry shell forming on the outside of a piece while the inside is still wet. It happens when the surface gives up water faster than the middle can move water out to the surface, which is caused by too high a temperature, by air that is too dry too early, or simply by pieces that are too thick. The piece feels done, goes into the jar, and over the following week the trapped moisture spreads back out and grows mould. Avoid it by staying at the temperature the food asks for instead of turning it up, by keeping slices under about a third of an inch, and by using the conditioning week to catch anything you got wrong.

How do I know when the food is actually dry?

Cool a piece first for at least five minutes, because warm food is always more pliable than it will be at room temperature and testing it hot is how batches get pulled early. Then use the test for that food: fruit should be leathery with no bead of moisture at a torn edge, vegetables should be brittle and snap, herbs should crumble between your fingers, and jerky should bend to about 90 degrees and crack along the bend without breaking in two. If you are unsure, put it back on the trays. Over-dried food is a texture problem, under-dried food is a mould problem.

What is conditioning and do I have to do it?

Conditioning is a week of storing the cooled batch in loosely filled sealed jars and shaking them once a day. Pieces never dry perfectly evenly, and conditioning lets the moisture left in the thicker pieces redistribute into the drier ones instead of sitting in one spot and growing mould. It is also a test: if condensation appears on the inside of the glass during that week, the batch is not dry enough and goes back on the trays. It costs nothing, and it is the step that separates dried food that keeps for a year from dried food that fails in a month. Skip it only for jerky, which is refrigerated or frozen anyway.
