The Canning Headspace & Processing Time Lookup answers the two questions every home canner has with the jar already in their hand: how much space to leave at the top, and how many minutes it goes in the canner. Pick the food, the jar size and the pack style, type your altitude, and the tool gives you the headspace drawn to scale inside your actual jar, the processing time already adjusted for where you live, and whether the jars need sterilising first.

The reason it is not just a chart: a chart cannot know your altitude, and altitude changes the answer in two completely different ways depending on the method. In a boiling-water bath you add minutes, because the water cannot get hotter than its boiling point. In a pressure canner you add pressure and leave the minutes alone. A chart also cannot refuse — this tool will not hand you a number for a quart of cream-style corn or a half-gallon of green beans, because no tested process exists and inventing one is how people get hurt.

Headspace: What It Is and Why It Is Not Optional

Headspace is the empty gap between the surface of the food and the rim of the jar. During processing the food expands and the air trapped in it is driven out past the lid; as the jar cools, the vapour left behind condenses and pulls the lid down. That vacuum is the seal. Get the headspace wrong in either direction and you interfere with it.

Too little headspace is the more common mistake. The food boils up during processing, siphons out over the rim, and leaves a residue on the sealing compound; the lid then either fails to seal or seals over food and unseals weeks later in the cupboard. Too much headspace leaves air the process cannot drive out, so the vacuum is weak, the top of the food discolours and the storage life drops. Always re-measure after removing air bubbles with a plastic tool down the inside of the jar — the level drops noticeably, and it is that second measurement that counts.

Why Altitude Changes Everything

Water boils when its vapour pressure matches the air pressure above it. Higher up, there is less air pressing down, so water boils cooler — roughly 1.8 °F lower per 1,000 feet. At sea level a boiling-water bath is 212 °F. In Denver at 5,280 ft it is about 202 °F. That is a real difference in the rate at which yeasts, moulds and enzymes are destroyed, and the published processes compensate for it with extra minutes.

Note what the pressure column does not say: it never adds minutes. A pressure canner's temperature is set by its pressure, so raising the pressure puts the temperature back where the process assumed it was, and the tested time stands. Adding both extra pressure and extra time simply overcooks the food. Above 10,000 ft there are no published processes at all.

Water Bath or Pressure Canner Is Decided by the Food

This is the one part of canning where personal preference has no vote. The dividing line is pH 4.6. Below it — fruits, properly acidified tomatoes, pickles in vinegar, finished ferments, jams — botulinum spores cannot grow, and a boiling-water bath at 212 °F handles everything else that could spoil the jar. Above pH 4.6 — plain vegetables, meat, poultry, fish, stock, soup, dried beans — the spores can germinate inside a sealed, oxygen-free jar and produce toxin, and they are only destroyed reliably at around 240 °F, which is 10–15 psi of steam pressure. No length of time in boiling water gets you there.

This is why pickled beets are water-bath canned and plain beets are not; why salsa is only safe as a tested recipe with a fixed ratio of tomatoes to onion and pepper; and why adding meat or mushrooms to a tomato sauce moves it into the pressure canner no matter how much lemon juice you stir in.

The Jar Size Rule Is Asymmetric

Processing times are validated in a laboratory on a specific jar size, by measuring how long heat takes to reach the coldest point in the jar. That gives you two rules that are not mirror images of each other:

  • Smaller than tested is fine, but the time does not shrink. A 4 oz jar of jam gets the same 5 minutes as a half-pint. Extra heat does no harm; less heat does.
  • Larger than tested is not fine at all. Heat has further to travel, and there is no data for it. 24 oz "pint-and-a-half" jars are not a USDA-tested size. Half-gallon jars have exactly two tested processes in the whole guide: apple juice and grape juice.

The 10-Minute Sterilising Rule

Jars only need pre-sterilising when the processing time is under 10 minutes; anything longer sterilises the jars in the canner as it processes them. The detail that catches people out is that the rule is applied to the time at your altitude, after the adjustment. A 5-minute jelly at sea level needs sterilised jars. The identical jelly at 4,000 ft is processed 15 minutes, so it does not. To sterilise, boil the empty jars 10 minutes and add 1 minute for each additional 1,000 ft of elevation.

How to Use This Lookup

  1. Choose the food from the grouped list. The last two groups are low-acid and are pressure canned; the method is picked from the food, not by you.
  2. Choose the jar size you are actually filling. If that size has no tested process for that food, the tool says so instead of guessing.
  3. Pick hot pack or raw pack. Only the pack styles with a tested process for that food are selectable.
  4. Enter your altitude in feet or metres, or tap a preset chip. This is the input that changes the answer most, and the one most charts leave out.

Canning Tips That Save Batches

⏱️ Start the clock at the boil

In a water bath the timer starts when the water returns to a full rolling boil after the jars go in, not when they go in. That is often 8–10 minutes of process people never give the jars.

🫧 Debubble, then re-measure

Run a plastic tool down the inside of the jar, then check the headspace again. The level always drops, and the second measurement is the one the process assumes.

🧽 Wipe the rim, every time

A smear of jam or a fleck of tomato on the rim is the most common cause of a failed seal. Use a cloth dampened with vinegar for anything oily.

🔩 Finger tight, not tight

Bands go on just until they resist. Air has to escape past the lid during processing; over-tightened bands trap it and buckle the lid.

🚫 Never invert or oven "can"

Turning hot jars upside down, or "processing" them in an oven or a dishwasher, does not produce a tested process. Neither reaches or holds the required temperature at the centre of the jar.

📓 Label with the date

Bands off, jar washed, label on. Sealed jars keep their best quality about a year, and a bare jar in a cupboard is a jar you will not trust in eighteen months.

Frequently Asked Questions

How much headspace should I leave when canning?

Headspace follows the food, not the jar. Leave a quarter inch for jams, jellies, fruit butters, juices and thin sauces; half an inch for most fruits, tomatoes and pickles; and a full inch for anything pressure canned and for starch-thickened pie filling. Measure from the rim of the jar down to the top of the food or liquid, after you have removed the air bubbles, not before. Too little headspace makes the food boil out over the sealing compound and the jar fails to seal; too much leaves air that the process cannot drive out, so the vacuum is weak and the food discolours at the top.

Do I have to adjust processing time for altitude?

Yes, and it is the adjustment people most often skip. Water boils cooler as you climb, about 1.8 degrees Fahrenheit lower per thousand feet, so at 5,000 feet a boiling-water bath is only about 203 degrees Fahrenheit instead of 212. In a boiling-water bath you make that up with time: add 5, 10, 15 or 20 minutes to a process of 20 minutes or less, and 10, 15, 20 or 25 minutes to a longer one, depending on your altitude band. In a pressure canner you make it up with pressure instead, not time: a weighted gauge goes from 10 to 15 pounds above 1,000 feet, and a dial gauge steps up one pound every 2,000 feet.

Can I use a boiling-water bath for green beans or other vegetables?

No. Plain vegetables, meat, poultry, fish, stock and dried beans are low-acid foods, and Clostridium botulinum spores survive boiling water indefinitely. They are only destroyed at around 240 degrees Fahrenheit, which a pot of boiling water cannot reach at any altitude and for any length of time. Those foods have to be pressure canned. The exceptions are vegetables that have been made acidic, such as pickled beets, dill pickles and fermented sauerkraut, and those go in a water bath because the vinegar or the ferment, not the heat, is doing the preserving.

Does a smaller jar need less processing time?

No, and this is the most common wrong assumption in home canning. A 4 oz or 8 oz jar gets exactly the same process as a pint. Processing time is set by how long heat takes to penetrate to the cold spot of the jar and by the heat resistance of the organisms in that food, and it is validated on a specific jar size in a laboratory. Going smaller than the tested size is safe because the extra heat does no harm, but shortening the time is not. Going larger is the dangerous direction, because heat has further to travel and no tested time exists.

Do I need to sterilise the jars first?

Only when the processing time at your altitude is under 10 minutes, which in practice means jams, jellies, juices and a few relishes at low elevation. Anything processed 10 minutes or longer sterilises itself in the canner, so the jars only need to be clean and hot. The interesting case is that the altitude adjustment is applied first: a 5-minute jam at sea level needs sterilised jars, but the same jam at 4,000 feet is processed 15 minutes and no longer does. To sterilise, boil the empty jars 10 minutes, adding one minute for every extra 1,000 feet of altitude.

Can I use 24 oz or half-gallon jars for canning?

Half-gallon jars have exactly two tested processes in the entire USDA guide, apple juice and grape juice, and nothing else should ever be canned in them. The 24 oz pint-and-a-half jar is not a USDA-tested size at all; manufacturers who sell it generally suggest using the quart process, which is conservative but has not been validated for any specific food. If it matters to you that the process is tested, stay with half-pints, pints and quarts, and use the larger jars for dry storage or refrigerator food instead.
