The Cheese Making Rennet Calculator turns a pot of milk into a full set of doses: rennet, starter culture, ripening mould, calcium chloride, the dilution water, and the time to cut the curd. It works in IMCU — International Milk Clotting Units — rather than teaspoons, so the same requirement converts cleanly into single-strength liquid rennet, double strength, vegetable rennet, powder, a cheese tablet or a Junket tablet.
Why Teaspoons per Gallon Is Not Enough
Almost every rennet chart online gives one number: half a teaspoon per gallon. That number is right for exactly one situation — a hard cheese, made from cow milk, at 32 °C, using single-strength liquid rennet. Change any one of those and it drifts:
- Your rennet is a different strength. Double-strength liquid is twice as concentrated, a cheese tablet is about 2500 IMCU, and a Junket dessert tablet only about 600. A tablet-for-tablet substitution can be four times off.
- Your milk is different. Goat milk is low in alpha-s1 casein and builds a weaker gel, so it wants roughly 15% more rennet and a gentler cut.
- Your vat is cooler than the recipe. Chymosin activity roughly doubles for every 10 °C, so a kitchen at 27 °C needs about 40% more rennet than one at 32 °C to flocculate on the same schedule.
- Your cheese is soft, not hard. Camembert and feta are set deliberately slowly with less rennet, so the curd stays fragile and holds moisture.
The Formula
Coagulation follows the Berridge relationship: clotting time is inversely proportional to enzyme concentration. Double the rennet and the milk flocculates in half the time. That single fact lets a dose be solved from the flocculation time you want, instead of copied from a table.
The anchor is 132 IMCU per litre flocculating in 12 minutes at 32 °C, which is exactly the classic half-teaspoon of single-strength rennet per US gallon — so this engine agrees with the recipe books at the reference point and extrapolates from there with real coagulation behaviour. Converting the requirement into something you can measure is then one division:
The Flocculation Multiplier Method
The best cheesemakers do not cut on a clock. They measure flocculation — the moment the milk first forms visible flakes — and multiply it. Float a small stainless bowl on the surface after the rennet goes in and spin it gently every minute. While the milk is liquid the bowl keeps turning; when it stops turning freely and drags to a halt, the milk has flocculated.

The reason this beats a fixed time is that it measures your milk on this day. Late-lactation milk, a cold kitchen, an older bottle of rennet and a slow culture all push flocculation later — and the multiplier moves the cut time with them automatically.
How Rennet Actually Works
Milk stays liquid because casein micelles are wrapped in a hairy layer of kappa-casein that keeps them apart. Chymosin, the active enzyme in rennet, snips that layer at a single bond, releasing a fragment into the whey. Stripped of their hairs, and helped along by the calcium in the milk, the micelles start bumping into each other and knitting into a three-dimensional gel — which is why calcium chloride matters, and why UHT milk, whose kappa-casein is already blanketed with denatured whey protein, never firms up.

Starter Culture, Mould and Calcium Chloride
Rennet sets the curd, but the starter culture makes the cheese. Direct-set (DVI) mesophilic or thermophilic powder is dosed at roughly 1/8 teaspoon per US gallon, and one small packet typically treats about 2 gallons. Mesophilic cultures work between 20 °C and 38 °C and suit cheddar, Gouda, feta and bloomy rinds; thermophilic cultures want 37–45 °C and belong in mozzarella, Parmesan and Gruyère. Ripening moulds — Penicillium candidum for a white bloomy rind, Penicillium roqueforti for blue — are dosed about thirty times more lightly, a genuine pinch per gallon.
Calcium chloride goes in first, before the culture, at a quarter teaspoon of 32% solution per gallon, always diluted. It replaces the soluble calcium that pasteurising and cold storage push out of the micelles. Skip it with raw milk, and never push past about 0.5 ml per litre — excess calcium chloride tastes bitter and can stop the curd knitting.
Twenty parts cool water to one of rennet. Undiluted rennet sets a streak of milk before you finish stirring and wastes half the dose.
Chlorine deactivates both rennet and starter. Use filtered, bottled or boiled-and-cooled water for every dilution.
Stir top to bottom for one minute, then still the surface with the back of the spoon. Milk that is moving cannot form an even gel.
Liquid rennet lives in the fridge and loses roughly 10% of its strength a year. If a bottle is over a year old, add 10–20% and expect a slower floc.
Slide a knife in at an angle and lift. A clean split with clear whey means cut; a ragged, milky tear means give it another five minutes.
Log the flocculation minutes for every batch. Over a season it tells you more about your milk than any recipe will.

How much rennet do I need per gallon of milk?
For a hard cheese such as cheddar, one US gallon of cow milk, which is 3.79 litres, takes about 2.5 millilitres of single-strength liquid rennet. That is half a teaspoon, or roughly 50 drops, and works out at 132 IMCU of clotting power per litre. Soft styles such as Camembert use about a fifth less, while a lactic chevre needs only a trace, around a tenth of the hard-cheese dose.
What is IMCU and why does this calculator use it?
IMCU stands for International Milk Clotting Units, the standard measure of coagulating power. A teaspoon of rennet means nothing on its own because single-strength liquid rennet is about 200 IMCU per millilitre, double strength is about 400, rennet powder is around 2200 per gram, a cheese tablet holds roughly 2500 and a Junket dessert tablet only about 600. What is the flocculation multiplier?
Flocculation is the moment the milk first forms visible flakes. You test for it by floating a small bowl on the surface and spinning it: while the milk is liquid the bowl turns freely, and when it stops turning the milk has flocculated. Multiply the minutes that took by the multiplier for your style to get the cut time, roughly 2.5 for Parmesan, 3 to 3.5 for cheddar and Gouda, 5 for feta and 6 for Camembert. Because it measures your actual milk on the day, the multiplier method beats any fixed clock time in a recipe.
Why will UHT milk not make cheese?
Ultra-pasteurised and UHT milk is heated to about 138 degrees Celsius, which denatures the whey proteins and binds them to the kappa-casein on the surface of the casein micelles. Rennet can still cut the kappa-casein, but the micelles can no longer knit into a firm gel, so you get a soft yoghurt-like mass that will not hold a clean cut at any dose. Use pasteurised, raw or reconstituted powdered milk instead, or make an acid-set cheese such as ricotta or paneer, which does not need a rennet curd.
Do I need calcium chloride?
Add it to shop-bought pasteurised or homogenised milk, to goat milk and to reconstituted powdered milk, where heat treatment has pushed soluble calcium out of the casein micelles and left a soft, slow curd. The standard dose is a quarter teaspoon of a 32 percent solution per gallon, diluted in a quarter cup of cool unchlorinated water and stirred in before the rennet. Do not add it to raw milk, and never exceed about half a millilitre per litre, because too much makes the cheese taste bitter.
Does the setting temperature change the rennet dose?
Yes. Chymosin activity roughly doubles for every 10 degrees Celsius of warming across its working range, so a vat at 27 degrees needs about 40 percent more rennet than the same vat at 32 degrees to flocculate on the same schedule. This calculator applies that correction automatically. Below about 15 degrees the enzyme is too slow to be practical, and above about 45 degrees it starts to denature and the curd never firms properly.
